View Full Version : How to prepare Bahamian style fish dish?

Can anyone tell me how to prepare "Bahamian style fish" I have a friend that had it at the Hopetown Harbour Lodge. Apparently tomatoe, onions etc served on top of grilled catch. I wondered if it was wrapped in tin foil before grilling. Any info would be greatly appreciated.

I believe you are talking about Stew fish - a Bahamian tradition.
There are dozens of different ways to make it - google stew fish and see which recipe tickles your fancy.

Fry some sliced onions, sliced sweet peppers, maybe some celery if you like it. After a couple of minutes add some tomato paste, water, salt, black pepper, thyme (very important), garlic, and some water. It should not be watery.
Bake or grill the fish of your choice which you should marinate in lime or lemon and salt... add garlic and black pepper. When the fish is almost done cover it with the fried onion sauce and put it back in the oven for a few more minutes to blend the flavors. It should taste very good.
You can also add chopped "fresh hot peppers" if you like them!
I find that if I wrap the fish in aluminum foil with the onion sauce on top, the steam will water down the flavors.

Quite honestly, we only make it very simple....either on a grill with butter and garlic salt or in an oven the same way. With lemon wedges.;)

I think you are talking about steamed fish, which is quite different from Stewed Fish - the latter is made with a brown gravy.
Everybody has their own recipe for steamed fish (or pork chops, chicken, crawfish etc.. the sauce is basically the same for all). Mine never tastes quite as good as Brenda's from Sea Spray but then it's always better if you don't have to cook it yourself.
(All Bahamians reading this, please excuse this "foreigners" recipe if it differs from your own/mothers.)
Steamed Fish
Equal amounts of diced celery, onion & sweet pepper (green pepper)
1 can diced tomatoes (the ones that include celery, sweet pepper & garlic are fine to use)
Sm. can Tomato Paste
Fresh Thyme sprigs
Finely diced Scotch Bonnet (hot) peppers
Couple of Bay Leaf
Salt & Pepper
Fish fillets (not too small). Grouper, Halibut, Sea Bass, Whole Snapper or even Cod works.

Saute celery, onions, sweet peppers and scotch bonnet with a little oil until soft.
Add diced tomatoes, tomato paste, thyme sprigs and bay leaf.
A little salt & pepper
Simmer, covered for about one hour.
Quickly pan-fry/sear fish with a little oil until they have a little surface colour
Place fish pieces in sauce.
Correct seasoning of sauce with S&P and hot sauce to taste.
Simmer, covered, for about 15 minutes until fish is fork tender.
Serve over steamed white rice with a dab of butter on rice.
