Can anyone help me with a good, easy Fish Taco recipe? Seems we eat fish almost every meal while in the Abacos and thought Tacos would be a nice change. Thanks.

Funny you should ask, because we just had them last night! My hubby caught close to 100 pounds of halibut on Saturday so we used that. But you can use whatever fish you catch on your trip. Here's how we do it:
Ingredients:
Fish preferably white meat.
Flour
Panko
Oil
Tortillas
Cabbage
Cheese
Mayonnaise
Sour Cream
Limes
Chili Powder
Hot Sauce
Cut the fish into strips. Dredge in flour, shake off excess, dip in beaten eggs or mayo or a combination. Dredge again in panko (they're Japanese bread crumbs that we bring with us). Heat oil and fry to a golden brown.
We use corn tortillas that we fry until they are soft but you can use flour tortillas if that's all they have in the markets.
In a bowl I mix half a cup (or so) mayo and sour cream, add some fresh squeezed lime and some chili powder. Set this aside for a condiment.
Finely shred some green cabbage. Shred some Monterey Jack cheese or Cheddar. Cut some limes.
Put the cooked fish in one or 2 corn tortillas and squeeze some limes on top of the fish. Add cheese, cabbage and sour cream/mayo mixture. Top with hot sauce and enjoy!

Do you need to use 100 pounds of fish or can you reduce the quantity? LOL! Sorry I couldn't resist on that one! Thanks for the recipe. ;)

Here's a recipe for beer-batter fish tacos. These get me rave reviews every time I make them. I got the recipe from www.allrecipes.com (http://www.allrecipes.com/) and it received 4.5 out of 5 stars from readers.
INGREDIENTS
1 cup all-purpose flour
2 tablespoons cornstarch
1 teaspoon baking powder
1/2 teaspoon salt
1 egg
1 cup beer
1/2 cup plain yogurt
1/2 cup mayonnaise
1 lime, juiced
1 jalapeno pepper, minced
1 teaspoon minced capers
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon dried dill weed
1 teaspoon ground cayenne pepper
1 quart oil for frying
1 pound white fish fillets, cut into 2 to 3 ounce portions
1 (12 ounce) package corn tortillas
1/2 medium head cabbage, finely shredded
DIRECTIONS
To make beer batter: In a large bowl, combine flour, cornstarch, baking powder, and salt. Blend egg and beer, then quickly stir into the flour mixture (don't worry about a few lumps).
To make white sauce: In a medium bowl, mix together yogurt and mayonnaise. Gradually stir in fresh lime juice until consistency is slightly runny. Season with jalapeno, capers, oregano, cumin, dill, and cayenne.
Heat oil in deep-fryer to 375 degrees F (190 degrees C).
Dust fish pieces lightly with flour. Dip into beer batter, and fry until crisp and golden brown. Drain on paper towels. Lightly fry tortillas; not too crisp. To serve, place fried fish in a tortilla, and top with shredded cabbage, and white sauce.

Ha, that is so funny! Nope, you can cut the recipe down a bit.:rolleyes:
Actually hubby and a couple of his buddies did the catching.

Mike, it weighed just a tiny bit more than 43 pounds, almost as big as Rick's record. Actually it was a she, I guess they grow bigger than the males:eek:
