Since Banyan Beach will probably not be open Nov. 20th does
anyone know how to make their Mango Splash?
Appreciate any help.

Ahhhhhhhhhhhhh..Many great memories there at Banyan. Does anyone have an update as to how they are doing with repairs and cleanup??

Try this one:
Ingredients:
1/3 cup curacao or other orange-flavored cordial
3 tablespoon fresh lime juice
12 lime wedges, for garnish
4 mango, ripe
3 tablespoon sparkling wine, chilled
Instructions:
Hold a mango stem-end up and slice flesh away from the long flat stone in long,vertical sections. Slice the flesh from the skin. Repeat these steps with the remaining mangoes.
Cut 12 thin, uniform slices for garnish and set them aside. Press the remaining mango slices through a strainer into a bowl. (Four mangoes will yield about 11/2 cups puree.) Stir in curacao, lime juice and sugar. (The mango puree and garnish can be prepared up to 8 hours ahead and stored in separate covered containers in the refrigerator.) Pour about 2 Tbsp. mango puree into a glass, top with sparkling wine, garnish with a lime wedge and a mango slice, and serve. Quantity:

Ah, but I can see now from the sign that it isn't even CLOSE! Their's is infinitely better!

Hello !
The wife and I will be in TC for the first time this spring. I have been to Abaco a few times purely to bonefish....this time its a combo trip.....vacation and BONEFISHING. If anyone has any nice pics of the TC area we would love to see them !!!! Thanks........
